Brinjal Vindaloo

Summary of Ingredients

  • Brinjals – 250 gms
  • Red Chillie powder – 1 tbs
  • Ginger – 1/2 tsp
  • Garlic – 1/2 tsp
  • Mustard seed – 1/2 tsp
  • Fenugreek Powder – 1/2 tsp
  • Cumin seeds – 2 pinch
  • Oil – 1 cup
  • Onions – 200 gms
  • Turmeric powder – 1/2 tsp
  • Tomato – 1 cup
  • Vinegar – 1 tsp
  • Salth to taste

Direction

  1. Grind red chillie powder, ginger, mustard seeds, fenugreek powder, cumin seeds, garlic with slight water
  2. Heat the pan with oil
  3. Add mustard seeds, onions. Saute the onions till it turns brown
  4. Add turmeric powder, tomatoes and the ground paste and mix it well
  5. Add the slit brinjals, mix it well
  6. Add vinegar, salt
  7. Mix it well and add a little water
  8. Cook for 10 mins
  9. Add ginger, garlic, vinegar, 1/2 tsp sugar and mix it
